3 RECIPE: Baked Salmon with Lemon & Garlic.

A healthy low-carb lunch recipe...

This recipe is fast, easy and ridiculously healthy so if you're feeling peckish, pop this bad boy in the oven and treat yourself to a salmon filled parcel of deliciousness without the guilt.

What you need:
Two salmon fillets.
One lemon (sliced, plus juice)
Chilli (fresh, paste or dried).
Dill (fresh or dried).
A clove of garlice (or two if you are a garlic fan!)
Three-four spring onions (chopped).
Salt & Pepper to season.
Salad leaves.
Tin foil & baking tray.

What you need to do:
Preheat your oven to gas mark 7 (220 Celsius) and line a baking tray with tin foil. Next, lay four lemon slices onto the baking tray and then top with your two salmon fillets.
Then, smear your chilli and garlic onto the salmon fillets, top with chopped spring onions and season with dill, salt and pepper. Drizzle a bit of lemon juice onto the fillets and then wrap the tin foil to create a parcel. Pop the parcel into the oven for around 20 minutes.

While the salmon is cooking away, put a big pile of salad leaves on a plate and dress with whatever dressing you like! I put a bit of extra virgin olive oil and lemon juice on mine, but any low fat, tangy dressing would work perfectly. Once the salmon is cooked through and flaky, lay the fillets on the salad leaves and munch away! Bon appétit!

Let me know in the comments if you've given this recipe a go or if you have any other delicious healthy recipes to share. Excuse the lack of pictures, I was so hungry when I made this that I ate it as soon as it came out of the oven, without a thought for taking some blog-friendly snaps!

87 Recipe: Smoked Salmon & Caper Salad.

'Ello,

The healthy lunch. That elusive but often thought of meal that has been too long cast aside aside for stodgy pasta, cheese filled sandwiches and buttery panninis. I, for one, hate lunch. I don't know how to approach it. I don't know what to eat to fill me up. How do I avoid beingstarving by 6pm and ravaging the fridge before dinnertime? What constitutes as a healthy lunch? How many calories should I be eating? RAH.

To avoid a cognitive breakdown, I try and think of interesting but healthy lunches ahead of time so I have a few recipes to whip out when I want something tasty, healthy AND filling. And because I'm such a great person, I'm sharing one of my favourites with you!

This is a smoked salmon salad with capers, Greek yoghurt, garlic and lemon juice and it is ridiculously easy and massively tasty!

Please note that my measurements aren't really accurate. I cook by guessing/tasting what flavours will work for me so if you prefer more potatoes or more salad leaves etc, go right ahead! This is also helpful for lazy people like me who can't be bother to locate the scales!

Ingredients:
  • 150g smoked salmon slices
  • 3 tablespoons greek yoghurt.
  • 1 tablespoon capers
  • 2 teaspoons lemon juice
  • 2 cloves garlic (crushed)
  • 5 baby potatoes
  • 1 tablespoon greated cheddar cheese
  • 1 bell pepper
  • Bowl of mixed salad leaves.

Method:
  • First, boil the potatoes until cooked
  • Then, mix together the yoghurt, garlic, capers and lemon juice together to make the dressing.
  • Next, add the smoked salmon.
  • Chop up the pepper and add to a bowl of mixed salad leaves.
  • Once the potatoes are cooked, add them and the cheese to the dressing.
  • Mix with the pepper/salad leaves.
VOILÀ. It takes about 10 minutes to make, tastes amazing and has just over 400 calories!

What are your favourite lunch recipes? Are they healthy or a little bit naughty?
